A Note About Roast Descriptions
American Roast/City Roast
Roasted to a brown color, the beans are dry and show no oil on
their surface. This is the lightest of our various roasts.
American, or City Roasts, are terms that denote a light, sweet
roast. City is considered just a hair darker than American.
Viennese Roast
Darker than the American Roast, the beans develop a slight
sheen as the coffee oils are forced to the surface. This is
also known as Cinnamon Roast.
French Roast
The beans are a deep brown and have developed a glossy
coating, the result of the coffee oils being forced to the
surface by the roasting process. The flavor of these coffees
is more developed than the lighter roasts. They are stronger
with more aroma. Sometimes referred to as Continental Roast,
or Spanish Roast.
Espresso Roast
The darkest and strongest of all my roasts. the beans are dark
brown and heavily covered with coffee oils.
Forte, Forte, forte!
In addition, there is the "Cafe Blend"
which is roasted to between a Viennese and French Roast. The
Cafe Blend is the same shade as the espresso currently in
fashion in Italy. During the last thirty years, Italian
roasters have moved away from the very dark roast originally
associated with espresso, cappuccino, cafe con leche, and
lattes.
